Restaurant Délice
Restaurant Délice is a training facility open to the public offering fine food
at reduced prices. Your meal is served and prepared by students comprising local
industry commercial cookery apprentices,
Certificate II in Hospitality
(Kitchen
Operations) and Certificate and Diploma of Hospitality (Front of House) working
under the supervision of SuniTAFE teachers and other industry leaders.
Students gain experience through practical skills which is part of their
assessment. For the Commercial Cookery students the restaurant day forms an
important aspect of their assessment. Each cooking student is allocated a
restaurant date and is required to submit a menu concept that is developed in
consultation with their teacher through to the version you see on your table.
Along the way the student is required to calculate detailed pricing information
and to requisition adequate supplies to cater for the day.
That student also becomes head chef for the day and is charged to instruct their
fellow students to prepare for service and oversees the preparation and service
of the meals. The head chef also liaises with the front of house team to explain
the menu and provides crucial information to ensure proper service.
Front of House supervision students focus on customer service, bar service,
coffee service and working in conjunction with kitchen staff, as well as having
the opportunity to experience events including Chefs of the Murray, The Longest
Lunch, Tourism Week and
Chefs of the Future Gala Dinner.
Kitchen Operation students gain experience through developing menus, providing
food orders and working with locally renowned chefs throughout our great local
chefs program.
Our international students which operates the restaurant each Thursday program
ensures that your dining experience is a truly cultural one.
Restaurant Délice is open most Tuesdays and Thursdays during the school term for
